A final fairwell

For local meat processors, the COVID-19 pandemic meant a number of changes. But in Buffalo, it meant a major increase in business. Some clients were force to look locally to process their domestic animals and others simply worried about food supplies and wanted to keep business local. Purcella's Meat Processing, the only state-certified processor in the area earning them the local meat processing jobs requiring formal certification, quickly filled need by extending hours. They started working longer days and occasionally weekends to keep up. The cooler was full with no hope of emptying as the business continued booking new orders - at one point more than seven months in advance.
